Oatmeal Caramelitas

Trevor had a birthday last week!  When I asked what dessert he wanted for his birthday he requested Oatmeal Caramelitas.  This is a dessert my good friend Tiffany has been making for years but Trevor finally decided to try them.  Haha he has been missing out for 13 years.  

This recipe is so quick and easy!

Oatmeal Caramelita Recipe

1 1/2 cups Flour
1 1/2 cups Oatmeal (quick oats)
1 cup Brown Sugar
3/4 teaspoon Baking Soda
1/4 teaspoon Salt
1 cup Butter, melted
1 cup Chocolate Chips
1 1/2 cups Walnuts (optional - I did not use nuts)
1 (12 oz.) Jar Caramel Ice Cream Topping
5 Tablespoons Flour

Preheat oven to 350 degrees.  Combine flour, oatmeal, brown sugar, soda, salt, and butter.  Press 1/2 of the mixture into bottom of greased 9X13 pan.  Bake for 10 minutes.  Take out of oven and sprinkle with chocolate chips (& nuts if using them).  Blend caramel sauce and flour until smooth and pour over chocolate chips.  Sprinkle with remaining crumb mixture.  Bake 15-20 minutes.  Cool & Cut 



These are great for a finger dessert or serve warm with ice cream.  I drizzed extra caramel sauce on top.
